Here’s a friend’s recipe. We’ve also used this recipe from alton brown which also adds vanilla bean.

Ingredients

  • 1 Tsp. Vanilla
  • 2 1/2 Cup Heavy Cream
  • 6 Egg yolks
  • 1 Cup Sugar (retain half for caramelizing top)

Directions

  1. Heat water for water bath
  2. Preheat the oven to 300°F (150°C)
  3. Heat cream but don’t boil–just steam
  4. Beat eggs and 1/2 cup of sugar
  5. Add vanilla and cream to eggs
  6. Pour mixture into ramekins already placed into a deep baking dish
  7. Pour water into dish and fill to 1 inch from the top of the ramekins
  8. Cook in oven for 25-30 minutes
  9. Remove, cool, chill for 4+ hours
  10. Caramelize top with remaining sugar
