This recipe was shared by Bekah’s mom from an apple shaped recipe book. We’ve increased the proportions on the topper by 50% because who doesn’t want more topping?

Ingredients

  • 1 1/2 cup flour
  • 1 1/2 cup quick oatmeal, uncooked
  • 1 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • Dash salt
  • 3/4 cup cold butter
  • 6 apples pealed and sliced (about 6 cups)
  • 1 tablespoon of lemon juice
  • 1 teaspoon cinnamon
  • 1/2 cup granulated sugar
  • 1/2 Gallon vanilla ice cream

Directions

  1. Preheat oven to 375°F (190°C)
  2. Combine flour, oatmeal, brown sugar, cinnamon, ginger, and salt in a mixing bowl.
  3. Cut in butter and mix until the mixture forms large crumbs.
  4. In a separate bowl, combine apples, cinnamon, lemon juice, and granulated sugar and mix well.
  5. Pour apple filling into a greased 8-inch square baking pan and top with flour mixture.
  6. Bake for 45 minutes until the fruit is tender and the top is lightly browned.
  7. Serve warm and top with a scoop of vanilla ice cream
